Who are we?
We’re Team Mellow — four very different humans (Vicky, Michael, Andy, and Min), stitched together by one shared obsession: coffee. Our backgrounds couldn’t be further apart — law, medicine, economics, media — yet somehow, all roads led us to the same thing: endless cups, late-night cupping sessions, and nerding out over beans. Then one day… boom! A spark lit up. We realized we didn’t just want to drink coffee — we wanted to create it, roast it, share it. Not just with friends, but with anyone willing to join our (de)caffeinated little universe.

Why does Mellow Coffee Roasters exist?
We asked ourselves a tough question at the start: “Why should anyone care about yet another coffee roaster in the Netherlands?”
Our answer? Because we want to bring something different to the table — literally. We grew up surrounded by the flavors and aromas of Asian coffee, yet in Europe, those beans often carry a reputation they don’t deserve. We’re here to change that. To prove that Asian origins are full of nuance, depth, and character worth celebrating. At the same time, we don’t want to just roast — we want to play. To experiment with more sustainable roasting techniques, fold in tech to make each batch consistent and high-quality, and push the limits of what coffee can be.

What’s our goal?
Simple: to showcase coffee from every corner of the world in a way that’s approachable, welcoming, and just plain fun. No coffee snobbery here. Whether you like your brew strong, light, experimental, or classic, we want you to feel at home. Coffee is a whole spectrum of flavors, and we’re here to explore it with you.
