Processing
Cherries are first sorted by density and quality—floated in water before being laid out on Africa-raised beds. There, the process becomes almost ritual: every 30 minutes, the beans are carefully rotated to ensure even drying and to keep the fermentation under control. Depending on weather and humidity, this patient craft takes 20 to 25 days, a slow rhythm that echoes the land’s traditions.
