Processing
The cherries for this lot were hand harvested, carefuly washed and meticulously selected. Once selected, they were taken to african beds to begain the drying process, where they remained until reaching approximately 17% humidity after 15 days. They were then transferred to the darkroom to complete the final drying, achieving a stable moisture content of 10.5%.
