Processing
This coffee underwent a traditional natural process. Freshly harvested ripe cherries were carefully sorted to remove defects and unripe fruit before being spread evenly on raised African drying beds. The cherries were dried under direct sunlight, with regular turning to ensure uniform dehydration and prevent over-fermentation. Depending on daily temperature, humidity, and wind conditions, the drying period typically ranged from several days to over weeks, continuing until the cherries reached optimal moisture stability.
