Processing
Cherries were harvested at 24–28 Brix and did not undergo cold water floatation. The process began with a 55°C, 30-minute thermal shock in cherry, followed by a fermentation sequence: 60 hours of anaerobic fermentation, 12 hours of oxidation, and 24 hours of submerged anaerobic fermentation, without leachate recirculation. After fermentation, a second 55°C, 30-minute thermal shock was applied. Finally, the coffee was dried using a dehumidifier machine for 60 hours.
