Processing
The coffee cherries were processed at a maturity of 24–28 °Brix and underwent cold-water flotation for quality selection.
Fermentation began with 12 hours of oxidation in cherry, followed by 48 hours of submerged fermentation. A controlled thermal shock was then applied at 50 °C for 30 minutes, after which the cherries underwent an additional 24 hours of oxidation in cherry.
The coffee was subsequently dried to a moisture content of 18–20% and later rehydrated. Fresh cherries were blended with the rehydrated cherries at a 50:50 ratio prior to depulping.
Throughout processing, leachate recirculation was employed to maintain microbial consistency. Final drying was completed using mechanical drying over a total duration of 60 hours.
