Processing
The coffee is a Gesha variety. Only ripe cherries are collected. The coffee is selected by density, de-pulped, and fermented in tanks for 48 hours. It is then washed and dried on shaded parabolic beds for 18–22 days, and turned several times a day. The drying time depends on weather conditions. The water used during processing is collected and treated to prevent environmental contamination
